Chef Tom Sellers, of the two Michelin-starred Restaurant Story, is set to open MOR at the Carbis Bay Estate in St Ives on
20 July 2026. MOR is defined by its coastal location: the name stemming from the Cornish word for sea, its setting overlooking the white sands of Carbis Bay, and the local produce on the menus.
Sellers will work with long-term collaborator and Executive Chef Tom Anglesea, alongside Jack Clayton (formerly of Scarlet Hotel, Newquay) and Corrin Harrison (formerly of Ynyshir and Gwen, Wales). The front of house team is equally impressive, with Katie Russell (formerly of Evelyn’s Table & Elystan Street) appointed MOR’s General Manager.
Together the team will deliver a visionary approach and Sellers’ signature storytelling at MOR, working with world-class produce to create an unforgettable dining experience at the point where land and sea meet.
An impressive raw bar and charcoal grill will anchor the a la carte menu, with dishes focused on precision and an elemental respect for the ingredients at hand. Guests will be encouraged to choose their own fish from the MOR counter, where the morning’s catch will be on display. The menu will vary with availability and seasonality, but guests can expect dishes such as Cornish bream, Mora Farm radish, sweet onion and chive; Octopus and shiitake skewer; and Dayboat market fish, Cornish earlies, garden salad and house condiments. Desserts will include Alphonso mango, daiginjo sake and kaffir lime and Jasmine rice soft serve, English wasabi and cherry.
Alongside MOR’s on-site kitchen garden, produce will be sourced from some of the nation’s finest suppliers, local to Cornwall, including dayboat fish from Kernow Sashimi, organic vegetables from Mora Farm, and crab and lobsters from independent fisherman John Tonks.
MOR's interiors have been created by acclaimed designer Shayne Brady, who has drawn on spiritual traditions of Japanese Shintoism and Cornish Celtic mysticism, blending natural stone, wood, and sheer fabrics to create a serene and contemporary sanctuary. Across the restaurant, bar and 14-seat private dining room, organic forms forged from nature and floor-to-ceiling windows will blur the boundary between the interior and exterior. The interiors will transition subtly from day to evening through shifts in colour, texture and light. Warm yellow ombré tones within the dining room reference sand, sunlight and the changing Cornish skies, while the bar adopts richer, moodier reds to create intimacy and drama after dark.
Interior details throughout MOR pay homage to British craftsmanship, with bespoke elements developed in collaboration with specialist local makers and artisans. Collaborators include Haroys for joinery, Ben Whistler for bespoke furniture, Atelier Lighting for custom lighting installations and Calico Interiors for soft furnishings. Key features of the space include a soft fabric ceiling installation by Elephant Road Studio, developed to evoke movement, lightness and the fluidity of the coastal environment. Another focal point is MOR’s statement fireplace, crafted from Cornish granite by Jamie Semmens, which anchors the space within the surrounding landscape.
Throughout MOR, Brady's designs will be complemented with bespoke artworks by The Connor Brothers, long-term collaborators of Tom Sellers.
With Carbis Bay Estate already celebrated for its unrivalled luxury in Cornwall, the arrival of MOR will further elevate this corner of the Cornish coast as one of the UK’s most exciting luxury dining destinations, and a place where nature, refined hospitality and exceptional gastronomy come together through this dynamic partnership.
MOR’s opening also marks the next chapter for HiStory Hospitality – Tom Sellers’ boutique and creative portfolio – featuring the two Michelin starred Restaurant Story, Story Cellar, Dovetale and Gwyn’s Bakery.

About Tom Sellers
Tom Sellers is a multi-award-winning British chef and restaurateur, best known as Chef Patron of Restaurant Story in London. He opened the restaurant in 2013 at just 26 years old, earning a Michelin star within five months and a second in 2021. About Tom Anglesea
Durham-born Tom Anglesea comes in as HiStory Hospitality’s Group Executive Chef after heading up Dovetale, 1Hotel as Executive Chef since 2022. Tom brings with him an abundance of experience and knowledge from some of the leading dining destinations in the UK and internationally. Tom has built his reputation working under revered industry names such as: Gordon Ramsay (at Boxwood Cafe, Maze and Restaurant Gordon Ramsay), Thomas Keller (Per Se), Neil Perry (Rockpool and Spice Temple), Rene Redzepi (Noma) and Nuno Mendes as Sous Chef (Chiltern Firehouse). His breadth of skills led him to the coveted role of Head Chef at The Laughing Heart - a late-night natural wine bar serving creative contemporary London cooking. Tom was selected to represent the North East at the Great British Menu Banquet, 2019, cooking his winning fish course. Tom is delighted to collaborate once again with Tom Sellers on this new project.
