Chef Tom Sellers of the two Michelin-starred Restaurant Story will open a new restaurant at Carbis Bay

Estate this summer. MOR, which draws its name from the Cornish word for ‘sea’ will be dedicated to the

rhythm and seasons of Cornwall. The opening marks an exciting return to the St Ives estate for Sellers,following the success of his 2019 pop-up, Story by the Sea.

Set above one of Britain’s most beautiful white sand beaches, MOR will be a restaurant defined by itscoastal location and its ambition to explore the natural wonders on its doorstep. Sellers will bring hisvisionary approach and signature storytelling to Carbis Bay, working with world-class Cornish produce to create an unforgettable dining experience at the point where land and sea meet.

At MOR, the rhythm and seasons of the ocean will set the tone. An impressive raw bar and charcoal grill anchor a menu that celebrates the region’s finest produce: hand-dived scallops, day boat fish, ex-dairy beef and seasonal vegetables grown specifically for MOR in the restaurant’s on-site kitchen garden.

With a focus on precision and an elemental respect for the ingredients at hand: dishes will include the likes of Cornish crab with steamed milk buns, house condiments & garden lettuces; Nori wrapped, day boat mackerel escabeche with English wasabi & young ginger and Cornish clotted cream soft serve, jasmine rice with salted caramel & horseradish.

MOR’s interiors have been created by acclaimed designer Shayne Brady of Studio Shayne Brady, renowned for its emotive, narrative-led approach to hospitality design. Brady’s designs for MOR draw on the spiritual traditions of Japanese Shintoism and Cornish Celtic mysticism, blending natural stone, wood, and sheer fabrics to create a serene and contemporary sanctuary. Organic forms forged from nature and floor-to-ceiling windows will blur the boundary between indoors and out, and the space will also incorporate a striking cocktail bar and an intimate 14-seat private dining room.

Of the opening Sellers says: “Cornwall has a magic unlike anywhere else in the world. At MOR, I want tocapture that sense of wonder, connecting people to the sea, the seasons, and to each other through food, craft, and storytelling.”

About Chef, Tom Sellers

Tom Sellers is a multi-award-winning British chef and restaurateur, best known as the Chef Patron of Restaurant Story in London. He opened the restaurant in 2013 at just 26 years old, earning a Michelin star within five months and a second in 2021. His cooking is defined by seasonality, storytelling, and a deep respect for provenance. His boutique hospitality portfolio – HiStory Hospitality - which spans restaurants and global dining experiences – includes his signature Restaurant Story, Story Cellar, a Parisian-inspired rotisserie and wine bar in Covent Garden, Dovetale, a modern European restaurant at 1Hotel Mayfair which opened in 2023, as well as Once Upon a Time, Sellers’ events service, offering guests the opportunity to create their own stories through food.

Sellers first partnered with Carbis Bay Estate in 2019, bringing Story to the Cornish coast in a celebrated pop-up. In Easter 2026, he returns to launch MOR - an ocean-inspired restaurant that honours Cornwall’s world-class produce and breathtaking landscape.

Sellers trained under some of the most acclaimed chefs in the world, including Tom Aikens, René Redzepi,and Thomas Keller, and is regarded today as one of the UK’s most dynamic culinary talents.
